Nanophyetus salmincola is an intestinal trematode that may infect humans following ingestion of metacercariae in salmon or trout from the Pacific Northwest.
Methods of preservation which may not kill the metacercariae:
(1) smoking
(2) salting
(3) partial cooking
Methods of preservation that will make metacercariae noninfectious:
(1) freezing
(2) cooking thoroughly
Additional recommendations:
(1) washing hands after handling fresh fish and before eating or preparing food
