Enteric pathogens can be spread by fruit juices if precautions are not taken.
Pathogens in fruit juice may include:
(1) pathogenic Escherichia coli
(2) Salmonella
(3) Shigella
(4) Listeria species
(5) Cryptosporidium
(6) Staphylococcus aureus
Products at risk:
(1) untreated (unpasteurized, not irradiated, not ultrafiltered)
(2) container opened and unrefrigerated in hot weather
(3) from street vendor
(4) lack of inhibitors (acid, preservatives)
(5) prepared from fruit not properly washed prior to preparation
(6) addition of unclean water
Patients at risk:
(1) infants and small children
(2) immunosuppression or immunodeficiency
Other hazards may include pesticide residues.
