Description

Molasses may be made from sugarcane, sugar beets or sweet sorghum grass. Molasses may be graded based on its appearance and qualities


Sugarcane may be boiled several times to release its sugar.

(1) The first boiling yields the first syrup or cane syrup.

(2) The second boiling yields second molasses.

(3) The third boiling yields blackstrap molasses which is dark.

 

If the molasses is treated with sulfur dioxide then it is referred to as sulphured molasses. This acts as a bleaching agent and preservative. Unsulphured molasses has not been treated with sulfur dioxide.

 

Sugarcane molasses is scored by several measures over a range from 0 to 100.

 

The score is based on:

(1) color relative to visual standards (0 to 50 points)

(2) freedom from defects based on cleanliness and presence of extraneous materials or sediments (0 to 50 points). A molasses that is practically free of defects is scored 45 to 50 points.

 

Flavor is not scored but can affect the final grade.
