Food workers can be an important source for outbreaks of a foodborne disease.


Ways that food workers can cause an outbreak of a foodborne disease:

(1) being a symptomatic or asymptomatic carrier of a contagious illness

(2) no or insufficient handwashing after going to the bathroom or coming in contact with body fluids

(3) failure to use barriers and coming into contact with food directly

(4) failures during the preparation or storage of food (failure to heat sufficiently, failure to refrigerate, etc)

(5) performing both food preparation and money changing functions interchangeably

(6) failure to perform sanitizing procedures

(7) failure to remove fomites such as jewelry or artificial nails
