The amount of lactose that a patient can tolerate in the diet may be affected by a number of factors.
Factors affecting the amount of lactose that can be tolerated:
(1) severity of the lactase deficiency
(2) addition of lactase to the diet (Lact-Aid, Dairy Ease, other)
(3) partial hydrolysis of the lactose (by fermentation or cooking)
(4) amount of lactose
(5) serving size
Dairy products or other sources of lactose may be successfully tolerated by working within these parameters. Some trial and error may be needed to determine a serving size or food that will be free of later regrets.
