Description

Sarcocystosis can be prevented by avoiding or treating the possible sources of exposure.


 

Routes of infection:

(1) meat containing cysts

(2) water contaminated with fecal material from animals or humans

(3) vegetables or other foods contaminated with fecal material

Food Product

Prevention

fresh meat

cook throughout for 5 minutes at 100°C or for 15 minutes at 70°C

fresh meat

freezing meat for 2 days or more at -4°C or for 1 day or more at -20°C

cooked meat product (bologna, hot dog, etc.)

no additional processing unless contaminated after production

water contaminated with fecal material

boil

vegetables contaminated by feces

thoroughly wash in clean water or boil

• A meat thermometer should be used to make sure that the meat is thoroughly cooked.
