Description

The goal of milk pasteurization is not to sterilize milk but rather to eliminate pathogens that are hazardous to human health.


 

Organisms eliminated by proper pasteurization include:

(1) Listeria monocytogenes

(2) Brucella species

(3) Salmonella species

(4) E. Coli (including O157:H7)

(5) Coxiella burnetti (Q fever)

(6) Campylobacter jejuni and other species

(7) Mycobacterium avium subspecies paratuberculosis

(8) Yersinia species

(9) Staphylococcus aureus

(10) polio and other enteric viruses

(11) Streptococcus pyogenes

(12) Corynebacterium diphtheriae

 

Failure to pasteurize or improper pasteurization can result in serious illness and death.
