Description

Bushmeat refers to the meat of any wild animal killed in the "bush". The term was initially from Africa but the eating of wildlife is a global phenomenon. It covers a wide range of animals and carries a range of hazards. In addition to health hazards, it is associated with depletion and possible extinction of species.


Health hazards:

(1) zoonotic infection (Ebola, Marburg virus, Monkeypox, Simian T-lymphotropic virus 1, COVID-19,etc)

(2) bacterial overgrowth due to improper storage and handling

 

High risk:

(1) illegally smuggled

(2) uninspected

(3) incompletely cooked

(4) improperly stored and handled

(5) zoonotic outbreak at time of collection

 

Low risk:

(1) properly inspected

(2) handled properly

(3) cooked thoroughly
