Description

Mycotoxins are toxins produced by fungi. These are widespread in the environment and can cause serious illness following either as acute or chronic exposure.


 

Under most circumstance a person will avoid eating obviously moldy food because it has:

(1) an unpleasant appearance

(2) an unpleasant taste or texture

(3) an offensive odor

 

A person may ingest moldy grains if:

(1) the person is starving

(2) the person lives in the country in a developing country

(3) there has been spoilage of grain because of excessive rain or silo leakage

(4) war or other natural disaster has disturbed normal agriculture

 

The person may unwittingly ingest mycotoxins if these are:

(1) excreted in milk from an animal who has eaten moldy grain or fodder

(2) in meat from an animal who ate moldy grain or fodder

(3) mixed with food that mask the flavor, color or odor

(4) present in low levels

(5) purified toxins are released as a bioweapon
